Yame Kabusencha
Dark rich green, full-bodied, smooth and round tasting kabusencha tea from Yame, one of the oldest tea production areas in Japan, located in the northernmost part of Kyushu island in South-Japan. Kabusencha is a shaded green tea, compared to Gyokuro, the shading is done for a shorter duration (usually around two weeks) and with less intensity, allowing more light to reach the leaf. Shading enhances the accumulation of chlorophylls and caretonoids as well as increases theanine in new shoots, creates a more delicate, aromatic and umami-flavoured tea. For this tea, Tsuyuhikari cultivar plants were picked and the steaming was done for a longer duration in fukamushi style, which is said to be particularly fitting for this cultivar.Compared to our similar styled green tea Sencha Kura, the flavour is much more nuanced and complex.
Brewing suggestions: 4 grams of tea per 200ml of 75C water, 1st steeping 1min, 2nd steeping 10-20 sec, 3rd steeping 30-60sec.
